Ingredients

  • 1 cup Bison Sour Cream
  • 4 oz onion-and-chive-flavored cream cheese, softened
  • 2/3 cup Thousand Island dressing
  • 6 oz deli corned beef, chopped
  • 1 cup sauerkraut, drained and rinsed
  • 2 cups shredded Swiss cheese
  • 1 tsp fresh chives, chopped
  • Rye bread or crackers for dipping

Instructions

  • Step 1

    Preheat oven to 350°F. Coat 1-qt baking dish with cooking spray.

  • Step 2

    Use a hand mixer to combine cream cheese, Thousand Island dressing, and Bison Sour Cream.

  • Step 3

    Squeeze-dry sauerkraut with a paper towel.

  • Step 4

    Add sauerkraut, chopped corn beef, and 1-1/2 cups shredded Swiss cheese to same bowl as cream mixture. Mix thoroughly and transfer to baking dish.

  • Step 5

    Top with remaining 1/2 cup of Swiss cheese, then bake for 30 minutes. When done, the dip will be golden and bubbly.

  • Step 6

    Top with chopped chives. Serve with rye bread or crackers and enjoy!
