These flavorful, fully-loaded baked potatoes made with Bison Cottage Cheese are a deliciously lighter alternative to traditional twice-baked potatoes.
This recipe uses:
Pierce the potatoes with a fork, place them in a microwave safe dish and microwave for 5-6 minutes.
Turn potatoes over and microwave for another 5-6 minutes, until they are tender.
While potatoes are cooking add Bison Cottage Cheese, cheddar cheese, bell peppers, green onion, bacon, and seasonings to a bowl. Toss together until combined.
When potatoes are done, let them cool to the touch. Cut in half with a knife and spoon the cottage cheese mixture evenly over the top of each one. Serve immediately and enjoy!
